Jicama Salad

zest and juice of one lime
2-3 tbl. orange juice
1/3 c. powdered sugar
1/8 tsp. chipotle chili powder
1/4 tsp. salt
1-2 tbl. olive oil
1 medium jicama - cut into matchsticks
1 cucumber - peeled, quartered, and sliced
1 apple - peeled, cored, and cut into chunks
2-3 tbl. red onion - finely diced
1-2 tbl. ciliantro - chopped

Mix lime thru salt in large bowl. Whisk in oil. Add veggies and toss. Serve chilled.
